Mayo Abomination
This mayo chicken is my favorite chicken recipe, which is great while doing low-carb dieting. ...Dieting. ...Heh.
Easy and kid friendly. You can also use nonfat, low fat , or full fat: sour cream, or plain yogurt. But why should you. It's all about the mayonnaise. This is what the American Dream is made of. Creamy goodness with lots of EDTA. Let's dive into it (see what I did there?)
Ingredients
- whole chicken, cut into 6 pieces
- 1 cup mayonnaise (the biggest cup you can find)
- 2 cloves garlic, crushed (vegetables are important)
- 1 tablespoon finely chopped fresh rosemary (healthy!)
- 1 teaspoon salt
- freshly ground black pepper to taste
- ½ cup grated Parmesan cheese (now we're talking, baby)
Steps
- Preheat the oven to 350 burgerunits.
- Place chicken pieces into a 9x13-inch baking dish. Stir together mayonnaise, garlic, rosemary, salt, and black pepper in a bowl. Spread mayonnaise mixture over chicken; top with Parmesan cheese.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 165 burgerunits.
